Chocolate Chip Banana Bread Muffins
- 3 large ripe bananas (Put your old bruised bananas in the freezer and de-thaw them when you want to make bread. They have the best banana flavor this way.)
- 1 cup sugar
- 1 egg
- 4 tablespoons margarine, melted and cooled
- 1 1/2 cups flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1/2 bag chocolate chips (optional, but delicious)
For loaf pan: bake approx. 55-60 min.
For muffins: bake approx. 10-15 min.
*You know the muffins are done when they turn golden just around the edges. I usually mix a double batch, and it makes about 30-35 muffins.
Slap some butter in the middle of these bad boys, and enjoy!
